Hi all. As we enjoy the weekend here’s a quick post with an easy recipe for chicken or tuna salad. This recipe is great as a sandwich, on crackers or naan bread (pictured here), on a bed of greens or even on its own. I love how awesome this works for picnics, car rides, lunches or in my most recent adventure – camping. The salad will keep for a few days (so long as you refrigerate), which makes it great if you’re expecting guests or are hitting the road.
Easy Chicken/Tuna Salad
4 cooked chicken breasts (we do ours on the BBQ), diced
1/2 c. light mayo
1/2 c. light plain yogurt
4 stalks of celery, diced
1/4 c. of diced red onion
1/2 tbsp of dijon mustard
salt and pepper
In a bowl combine chicken breasts, celery, and red onion and in another bowl combine the remaining ingredients and mix. Combine the items from both bowls and voila! Easy chicken salad.
NOTE: You can also use this recipe if you have left over chicken or even try it with tuna (2 cans and half the recipe) if you’re a vegetarian.
