Yummy Pumpkin Oatmeal Muffins


So apparently I didn’t get my pumpkin fill over the Thanksgiving weekend because this week I found myself busy in the kitchen baking up some tasty Pumpkin Oatmeal Muffins. And don’t let the name fool you… pumpkins and oatmeal CAN go together.  I even got a yum of approval from W and have since had to consider hiding the stash 😉


1 can (E.D. Smith) Pumpkin Pie filling
1 c. all-purpose flour
1 c. whole wheat flour
1/2 c. brown sugar
1 1/2 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon* or more 🙂
1 tsp nutmeg
1 c. milk
4 eggs, beaten
1 1/2 c. rolled oats
a few pinches of salt (to your liking)

Directions: 1) Pre-heat oven to 375 degrees and line your muffin tray with muffin cups. 2) Whisk all the dry ingredients together (flour, baking soda, baking powder, spices, sugar) until combined. 3) Mix in wet ingredients (pumpkin puree, milk, eggs), 4) Fold in rolled oats. 5) Spoon lots into 12 muffin cups so that they’re mighty full. 6) Bake for ~20 min, 7) place on a cooling rack until (mostly) cool 8) enjoy!
